Fettuccine Alfredo

Fettuccine Alfredo (fettuccine all'Alfredo) is an Italian dish made with fettuccine, butter and Parmesan cheese. With the melting of the cheese and the creamy butter, a smooth and rich emulsion is created.

Ingredients

  • 15 oz. egg Fettuccine
  • 10 oz. Parmesan Cheese very finely grated and sifted 3 times
  • 1 cup butter soft
  • 1 butter to serve, knob
  • salt
  • black pepper freshly ground

Instructions

  1. Cook the fettuccine in plenty of salted water (according to package directions).
  2. Once cooked, transfer the fettuccine to a glass bowl using tongs, being careful not to drain it too much.
  3. Reserve the cooking water.
  4. Add a third of the butter and a third of the Parmesan cheese, and start mixing.
  5. Repeat the last step 3 times until all the butter and Parmesan cheese are incorporated.
  6. If necessary, to make the mixture creamy, use some of the cooking water.
  7. Serve by adding a knob of butter and stirring. Season with freshly ground black pepper.
