Fiesta Chicken Pasta Salad

Ingredients

  • 1 pound bow tie pasta or Farfalle noodles, box
  • 1 taco seasoning 1 ounce packet
  • 1 cream cheese chive and onion flavor, 8 ounce container
  • 1 1/2 cups ranch dressing prepared
  • 2 boneless skinless chicken breasts, cooked and cubed (a rotisserie chicken works great for this)
  • 1 black beans 15 ounce) can, drained and rinsed
  • 1 corn canned, drained, 10 ounce can
  • 1 red bell pepper chopped
  • 1/4 cup cilantro chopped, fresh

Instructions

  1. In a large pot of water, boil noodles according to package directions. Drain water, and then place noodles in a large bowl. To the hot noodles, add cream cheese, taco seasoning and ranch dressing. Mix well to combine.
  2. Add in cooked chicken, black beans, corn, bell pepper and cilantro. Stir gently to combine.
  3. Cover with lid or cover tightly with saran wrap. Place in refrigerator and chill for atleast 4-5 hours before serving. Enjoy!
