Fiesta Corn Dip

Fiesta Corn Dip is a creamy and crunchy appetizer or side dish that is great for any dinner party. The flavor and texture of this dip is completely addicting!

Ingredients

  • 2 cans (15 ounces, each) corn drained
  • 1/2 red bell pepper remove seeds then dice
  • 1/2 Tablespoon jalapeño seeds removed (can add more or less depending on heat tolerance, freshly chopped
  • 4 Tablespoons cream cheese softened, with chive and onion
  • 1/4 cup yogurt plain, Greek
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cumin ground
  • 1/2 teaspoon chili powder
  • 2 Tablespoons cilantro freshly chopped
  • 2 green onions thinly sliced

Instructions

  1. Combine all the ingredients in a medium size mixing bowl. Gently stir until everything is combined and evenly coated.
  2. Cover bowl with plastic wrap then store in the refrigerator for at least 3 hours or longer to incorporate all of the flavors.
  3. Serve dip with your favorite tortilla chips and corn chips. You can also serve this dip over chicken or shrimp. Enjoy!

Notes

  • *Can also use 4 cups fresh or frozen corn. Thaw frozen corn first.
