Fiesta Corn Dip

Fiesta Corn Dip is a creamy and crunchy appetizer or side dish that is great for any dinner party. The flavor and texture of this dip is completely addicting!

Ingredients
- 2 cans (15 ounces, each) corn drained
- 1/2 red bell pepper remove seeds then dice
- 1/2 Tablespoon jalapeño seeds removed (can add more or less depending on heat tolerance, freshly chopped
- 4 Tablespoons cream cheese softened, with chive and onion
- 1/4 cup yogurt plain, Greek
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon cumin ground
- 1/2 teaspoon chili powder
- 2 Tablespoons cilantro freshly chopped
- 2 green onions thinly sliced
Instructions
- Combine all the ingredients in a medium size mixing bowl. Gently stir until everything is combined and evenly coated.
- Cover bowl with plastic wrap then store in the refrigerator for at least 3 hours or longer to incorporate all of the flavors.
- Serve dip with your favorite tortilla chips and corn chips. You can also serve this dip over chicken or shrimp. Enjoy!
Notes
- *Can also use 4 cups fresh or frozen corn. Thaw frozen corn first.
