Fig and Jalapeno Grilled Cheese
Roasted jalapeños, dried figs and spicy cheddar cheese are combined in this delicious, sweet and spicy, vegetarian jalapeno grilled cheese sandwich recipe!

Ingredients
- 4 large jalapenos
- 8 slices sweet hawaiian bread
- 4 tbsp butter softened
- 8 slices spicy cheddar cheese
- 24 dried figs
Instructions
- Heat the broiler on the oven to high, then place the jalapenos on a baking sheet under the broiler.
- Broil for 3-4 minutes per side, or until the skins are black and bubbling.
- Remove from the oven and immediately place the jalapenos in a ziplock bag and seal shut.
- Wait 5-10 minutes then remove the jalapenos from the bag.
- When cool enough to touch, peel the jalapenos, remove the stem, slice open and remove the seeds and slice into 3-4 strips.
- Butter one side of each slice of sweet Hawaiian bread.
- Place a slice of cheese on the opposite side of each slice of bread.
- On four of the slices of bread, place one sliced jalapeno and 6 dried figs.
- Cover with the other slices of buttered bread with cheese.
- Heat a large skillet over medium heat and grease lightly.
- Add the sandwiches and grill 3-4 minutes per side or until browned on the outside.
