Financier Recipe
Description
The Financier Recipe blends almond flour and all-purpose flour to provide structure and delicate nut flavor. Egg whites are whipped with powdered sugar to soft peaks, incorporating air for a tender crumb. Gently folding in the dry ingredients, melted butter, and vanilla extract ensures the batter remains light without overworking the flour. Using a piping bag helps achieve uniform shapes in special financier molds, while sliced almonds atop add texture.
Baking at 220°C (428°F) for about 12 minutes gives the financiers a crisp, golden crust with a moist center. Their size and texture make them ideal for serving with coffee or tea. The almond notes dominate, complemented by the subtle sweetness and buttery richness. They pair well with fresh fruit or marmalade.
Precise ingredient weights in grams are important for best results. Using a digital kitchen scale is recommended to maintain the proper balance, as these delicate cakes rely on accurate measurements for texture. Avoid substituting volume measures as it may alter the crumb and baking performance.
Ingredients
- 30 g (1 oz) almond flour
- 30 g (1 oz) all-purpose flour
- 2 egg white
- 80 g (2⅘ oz) powdered sugar
- 50 g (1¾ oz) butter
- 1/2 teaspoon vanilla extract
- almonds optional, sliced
Instructions
- Combine almond flour and all-purpose flour together.
- Using a stand mixer or electronic hand mixer. Beat the egg white and powdered sugar until snowy or until soft peaks form.
- Gently incorporate the flour mixture. Slowly add butter and vanilla extract until the batter becomes smooth. DO NOT over mix.
- Transfer the batter into a piping bag or a plastic bag, with one of the edges snipped off. Add the batter into financiers mold. Top each financier cake with a few sliced almonds. Bake at 220°C (428°F) for 12 minutes.
Notes
- Use a digital kitchen scale for precise measurement; fine differences affect the cake's texture.
- Avoid converting grams to cups or tablespoons to maintain recipe accuracy.
- Piping the batter into molds helps produce evenly sized financiers with a consistent bake.
- Sliced almonds on top add a subtle crunch and nutty aroma to each cake.
