Ingredients

  • 2 large thick slices (stale) panettone cut into quarters
  • 2-3 tablespoons double heavy cream
  • 125 | 1/2 cup whole milk
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter +1 tbsp grapeseed oil

  • To serve
  • maple syrup or agave syrup
  • fresh citrus slices or persimmon slices
  • pomegranate seeds
  • icing sugar to dust

Instructions

  1. Mix the eggs, cream, milk, sugar and vanilla extract in a large shallow bowl.
  2. Dip the panettone slices in the egg so that they absorb some of the egg mix but are not totally saturated.
  3. Heat the butter and oil in a non-stick frying pan and fry the panettone, in batches, for about 2 minutes per side until golden.
  4. Serve warm topped with citrus or persimmon slices with a scattering of pomegranate seeds and a generous drizzle of maple syrup. Dust with icing sugar for a snowy effect.
