Fire-Roasted Cherry Tomato Salsa

Ingredients

  • 1 tbsp vegetable oil
  • 2 cups cherry tomato
  • 2 cups sun gold tomato
  • 2 jalapeno pepper stem removed, sliced in half lengthwise
  • ½ yellow onion chopped
  • 5 garlic cloves, leave in their skins
  • ½ cup cilantro fresh
  • lime juice juice from 1/2 lime
  • ⅛ tsp cumin
  • ⅛ tsp oregano
  • salt sea salt and freshly cracked, to taste
  • black pepper sea salt and freshly cracked, to taste

Instructions

  1. Heat the oven to broil and move the oven rack to the highest position. 
  2. Brush some vegetable oil on a baking sheet until lightly coated. Add the tomatoes, jalapenos, onion, and garlic cloves (still in their skins) to the baking sheet. 
  3. Broil until the veggies are slightly charred, about 2-3 minutes. Watch carefully so they don't burn!
  4. Remove from the oven and allow the charred veggies to cool completely. Remove the garlic from the skins once they are cool. 
  5. Place the cooled charred veggies in a blender and add the cilantro, lime juice, cumin, oregano, sea salt, and freshly cracked pepper, to taste. 
  6. Blend until the salsa reaches your desired consistency.
  7. Taste and add more seasoning or lime juice, if needed. Serve with chips. Enjoy.
