Ingredients

Chicken:
  • 2 pounds chicken breast cut into 1-inch chunks
  • 1 cup cornstarch
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper ground
  • 2 egg beaten
  • canola oil for frying
Firecracker Sauce:
  • 2/3 cup hot sauce Buffalo style
  • 2 tablespoons ketchup
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 tablespoon chili paste optional
  • 1/2 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon red pepper flakes or more to taste
Garnish:
  • green onions
  • sesame seeds

Instructions

  1. In a medium bowl combine all the SAUCE ingredients and set aside.
  2. In a large, shallow bowl, whisk cornstarch flour, salt, and black pepper.
  3. Add beaten eggs to another bowl.
  4. Pour about 2 inches of canola oil into a deep frying pan and heat it over medium-high heat.
  5. Dip the chicken pieces into the beaten eggs.
  6. Add the chicken chunks to the cornstarch mixture and toss until well coated. Work in batches.
  7. Cook it in batches in the hot oil until golden and crispy.
  8. Remove to a plate and set aside.
  9. Toss chicken with sauce. You may reserve some of the sauce to place on rice.
  10. Serve it with a sprinkling of green onion and sesame seeds, if so desired.
