Description
Firecracker Chicken is made by cutting chicken breasts into bite-sized pieces, then dipping them first in beaten eggs and coating them in a mix of cornstarch, flour, salt, and pepper. This batter produces a crisp crust after frying in hot canola oil. The sauce combines Buffalo-style hot sauce, ketchup, minced garlic, grated ginger, chili paste, brown sugar, rice vinegar, and red pepper flakes to achieve a balanced sweet, tangy, and spicy flavor. This sauce coats the fried chicken pieces, giving a glossy, vibrant finish.
The dish is completed by sprinkling chopped green onions and sesame seeds for added freshness and a nutty note. The crispy exterior contrasts the tender interior of the chicken. Ingredients
Chicken:
- 2 pounds chicken breast cut into 1-inch chunks
- 1 cup cornstarch
- 1/4 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper ground
- 2 egg beaten
- canola oil for frying
Firecracker Sauce:
- 2/3 cup hot sauce Buffalo style
- 2 tablespoons ketchup
- 2 cloves garlic minced
- 1 tablespoon ginger grated
- 1 tablespoon chili paste optional
- 1/2 cup brown sugar
- 1 tablespoon rice vinegar
- 1/4 teaspoon red pepper flakes or more to taste
Garnish:
- green onions
- sesame seeds
Instructions
- In a medium bowl combine all the SAUCE ingredients and set aside.
- In a large, shallow bowl, whisk cornstarch flour, salt, and black pepper.
- Add beaten eggs to another bowl.
- Pour about 2 inches of canola oil into a deep frying pan and heat it over medium-high heat.
- Dip the chicken pieces into the beaten eggs.
- Add the chicken chunks to the cornstarch mixture and toss until well coated. Work in batches.
- Cook it in batches in the hot oil until golden and crispy.
- Remove to a plate and set aside.
- Toss chicken with sauce. You may reserve some of the sauce to place on rice.
- Serve it with a sprinkling of green onion and sesame seeds, if so desired.
