Flourless Chocolate Dipped Peanut Butter Cookies

Flourless Chocolate Dipped Peanut Butter Cookies. Healthy peanut butter cookies dipped in dark chocolate. All-natural peanut butter cookies with only 5 ingredients! Flourless, butterless, peanut butter dark chocolate cookies.

Ingredients

  • 1 cup peanut butter (all-natural salted or regular)
  • 1 cup dates (pitted and tightly packed)
  • 1 large egg
  • 1 Tablespoon vanilla
  • 6 ounces dark chocolate (melted)
  • chopped peanuts (optional)

Instructions

  1. Preheat oven to 350 degrees. Line a baking sheet with a Silpat or parchment paper or lightly spray with non-stick cooking spray.
  2. In a food processor, pulse the dates for 1 minute. Add peanut butter, egg, and vanilla and puree until smooth. 
  3. Roll the dough into 15 balls and place on the baking sheet. Using a fork, press down on the center of the cookie to make a criss-cross pattern. Bake at 350 degrees for 8-10 minutes. Watch carefully as the cookies will still look soft when baking time is completed.
  4. Remove cookies from oven and let cool for several minutes. Before dipping in chocolate, freeze cookies for 15 minutes to allow them to set-up. 
  5. Melt chocolate in a double boiler or at 50% power in a microwave-safe bowl for 30-second increments. Stir often just until melted, being careful to not overcook the chocolate. 
  6. Drizzle the chocolate over half of the cookies or dip half of the cookie into the chocolate. Sprinkle with chopped peanuts. Let set up for a few minutes.
