Flourless Chocolate Dipped Peanut Butter Cookies. Healthy peanut butter cookies dipped in dark chocolate. All-natural peanut butter cookies with only 5 ingredients! Flourless, butterless, peanut butter dark chocolate cookies.

Ingredients
- 1 cup peanut butter (all-natural salted or regular)
- 1 cup dates (pitted and tightly packed)
- 1 large egg
- 1 Tablespoon vanilla
- 6 ounces dark chocolate (melted)
- chopped peanuts (optional)
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with a Silpat or parchment paper or lightly spray with non-stick cooking spray.
- In a food processor, pulse the dates for 1 minute. Add peanut butter, egg, and vanilla and puree until smooth.
- Roll the dough into 15 balls and place on the baking sheet. Using a fork, press down on the center of the cookie to make a criss-cross pattern. Bake at 350 degrees for 8-10 minutes. Watch carefully as the cookies will still look soft when baking time is completed.
- Remove cookies from oven and let cool for several minutes. Before dipping in chocolate, freeze cookies for 15 minutes to allow them to set-up.
- Melt chocolate in a double boiler or at 50% power in a microwave-safe bowl for 30-second increments. Stir often just until melted, being careful to not overcook the chocolate.
- Drizzle the chocolate over half of the cookies or dip half of the cookie into the chocolate. Sprinkle with chopped peanuts. Let set up for a few minutes.
