Fluffy Pumpkin Spice Pancakes

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 ¼ cups milk any
  • ½ cup pumpkin puree
  • 1 large egg
  • 2 tablespoons butter melted

Instructions

Make the batter:

  1. In a bowl, combine the flour, brown sugar, baking powder, salt and pumpkin pie spice and stir to combine.
  2. In a large bowl, whisk the milk, pumpkin puree, egg, and butter. Mix until there are few to no lumps left.
  3. Combine the dry and wet ingredients in the large bowl and whisk until there are no visible clumps left.
Cook the pancakes:
  1. Heat a non-stick griddle or large pan over medium-high heat. Once hot, grease, spray, or melt butter on the hot surface. When using an electric griddle, heat it somewhere between 300 and 350F.
  2. Immediately, pour ¼ cup of pancake batter onto the greased pan. Cook the pancakes for about 2 minutes, until the edges begin to look defined and bubbles form. Flip the pancakes over and cook for another minute on the other side. Remove from the pan onto a plate and keep them warm while you cook the rest of the batter.
  3. Serve the pancakes warm topped with your favorite toppings and syrups.
