Ingredients

  • 2 cups all-purpose flour 272g
  • 2 teaspoons baking powder
  • ¾ cup pumpkin puree 169g
  • 2 egg large
  • 1 cup buttermilk
  • 3 tablespoons maple syrup
  • 2 tablespoons butter melted
  • 1 ½ teaspoons pumpkin pie spice

  1. Preheat the waffle iron.
  2. Add all the dry ingredients into one bowl and stir to combine.
  3. Mix together the wet ingredients in another bowl.
  4. Add the wet ingredients to the dry and mix until just combined.
  5. Lightly spray the preheated waffle iron and pour the waffle mix in. The amount of batter needed varies based on each waffle iron. Scoop the batter into your waffle iron in batches and cook according to the manufacturer’s directions (and to your preference for how golden and crisp they are).
  6. Keep finished waffles warm while cooking the remaining batter.

Notes

  • Oiling the waffle iron before each batch helps waffles release cleanly and develop an even crust.
  • To keep waffles warm while cooking the rest, place them on a wire rack in an oven heated to 200°F (94°C) for up to 10 minutes.
  • Increasing waffle iron heat can yield crispier waffles but watch closely to avoid burning.
  • Do not overmix the batter to prevent dense waffles; mix until just combined.
  • Cooked waffles can be stored in freezer bags for up to one month for convenient reheating.
