Fluffy Pumpkin Waffles
Description
Fluffy Pumpkin Waffles feature a batter made from all-purpose flour, baking powder, and a blend of pumpkin pie spice paired with pumpkin puree and buttermilk. The baking powder and buttermilk work together to create a batter that yields soft, airy waffles with a slightly crisp exterior. Incorporating maple syrup and melted butter enriches the flavor and texture. Cooked in a waffle iron, these waffles develop a golden crust while maintaining a tender interior. They can be served warm with additional maple syrup or butter.
The flavor balance comes primarily from the pumpkin puree and pumpkin pie spice, giving a mild spicy and autumnal note that is distinct but not overpowering. The waffles hold their shape well and have a pleasant mouthfeel that pairs well with typical breakfast accompaniments.
To best serve, keep cooked waffles warm in the oven on a wire rack to retain crispness. They can be enjoyed plain or topped with syrup or fruit. These waffles also freeze well when stored in freezer bags, making them convenient for make-ahead breakfasts.
Ingredients
- 2 cups all-purpose flour 272g
- 2 teaspoons baking powder
- ¾ cup pumpkin puree 169g
- 2 egg large
- 1 cup buttermilk
- 3 tablespoons maple syrup
- 2 tablespoons butter melted
- 1 ½ teaspoons pumpkin pie spice
Instructions
- Preheat the waffle iron.
- Add all the dry ingredients into one bowl and stir to combine.
- Mix together the wet ingredients in another bowl.
- Add the wet ingredients to the dry and mix until just combined.
- Lightly spray the preheated waffle iron and pour the waffle mix in. The amount of batter needed varies based on each waffle iron. Scoop the batter into your waffle iron in batches and cook according to the manufacturer’s directions (and to your preference for how golden and crisp they are).
- Keep finished waffles warm while cooking the remaining batter.
Notes
- Oiling the waffle iron before each batch helps waffles release cleanly and develop an even crust.
- To keep waffles warm while cooking the rest, place them on a wire rack in an oven heated to 200°F (94°C) for up to 10 minutes.
- Increasing waffle iron heat can yield crispier waffles but watch closely to avoid burning.
- Do not overmix the batter to prevent dense waffles; mix until just combined.
- Cooked waffles can be stored in freezer bags for up to one month for convenient reheating.
