Fluffy Toasted Coconut Frosting

This fluffy, toasted coconut frosting is perfect for brownies, cakes, or cupcakes. It is super creamy and packed full of toasted coconut.

Ingredients

  • 1 cup unsalted butter room temperature
  • 1-1/2 cups powdered sugar
  • 2 tablespoons coconut milk
  • 2 teaspoons vanilla bean paste
  • ½ teaspoon kosher salt
  • 1 cup Toasted Coconut

Instructions

  1. Add butter to the bowl of an electric mixer and mix on high speed for 5 minutes - or until the butter is light and fluffy.
  2. Add in powdered sugar, coconut milk, vanilla bean paste, and kosher salt. Mix on medium speed for 5 minutes. At this point, the mixture should be looking very fluffy.
  3. Fold in the toasted coconut.
  4. Use frosting to top brownies, cakes, or cupcakes.

Notes

  • How to make toasted coconut: Preheat your oven to 325 degrees F. Add 1 cup sweetened shredded coconut to a sheet pan and toast in the oven for 5-10 minutes. Toss the coconut a few times while it bakes until it's golden brown. Keep at eye on the coconut in the oven as it can burn quickly.
