  • 20 gms extra virgin olive oil plus more for the cookie sheets and focaccia surface, 0.7 oz. - 1 1/3 tbsp, for the dough
  • 7 gms salt 0.25 oz. - 1 1/2 tsp
  • 3 gms malt or ½ tsp honey
  • 320 gms all-purpose flour 11.25 oz
  • 6 gms dry yeast 0.2 oz. - 1 1/4 tsp, dissolved in 1 tbsp warm water
