Fragrant Thai Beef Skewers with Hot & Sour Dressing

Ingredients

For the marinade:
  • 2 tablespoon soy sauce
  • 2 tablespoon fish sauce
  • 1 inch piece fresh ginger
  • 4 garlic cloves - minced
  • 3 tablespoon lime juice
  • 3 tablespoon brown sugar
  • 1 teaspoon sririacha
  • 1 tablespoon coconut oil
For the skewers:
  • 1 ½ lb skirt steak/flank steak
  • 18 each bamboo skewers - soaked in water for 30 minutes
For the dipping sauce:
  • 3 limes - juiced
  • ¼ cup fish sauce
  • ¼ cup sugar
  • ½ cup water
  • 3 cloves garlic - crushed
  • 3 finely chopped thai bird chilies - add more or less to taste

Instructions

For the steak:
    Cup of Yum
  1. Place the marinade ingredients in the food processor and whizz until you have a chunky paste.
  2. Cut the steak into 1 inch strips
  3. Mix the steak and the marinade together and place in the fridge for 4 hours.
  4. When you are ready to cook get the grill super hot and whilst it is heating up thread a strip of beef onto each bamboo skewers.
  5. Grill the beef skewers over a high heat for 1 minute on each side. Serve with the dipping sauce.
For the dipping sauce:
  1. Mix all the ingredients together until the sugar has dissolved.
