Ingredients
For the marinade:
- 2 tablespoon soy sauce
- 2 tablespoon fish sauce
- 1 inch piece fresh ginger
- 4 garlic cloves - minced
- 3 tablespoon lime juice
- 3 tablespoon brown sugar
- 1 teaspoon sririacha
- 1 tablespoon coconut oil
For the skewers:
- 1 ½ lb skirt steak/flank steak
- 18 each bamboo skewers - soaked in water for 30 minutes
For the dipping sauce:
- 3 limes - juiced
- ¼ cup fish sauce
- ¼ cup sugar
- ½ cup water
- 3 cloves garlic - crushed
- 3 finely chopped thai bird chilies - add more or less to taste
Instructions
For the steak:
- Place the marinade ingredients in the food processor and whizz until you have a chunky paste.
- Cut the steak into 1 inch strips
- Mix the steak and the marinade together and place in the fridge for 4 hours.
- When you are ready to cook get the grill super hot and whilst it is heating up thread a strip of beef onto each bamboo skewers.
- Grill the beef skewers over a high heat for 1 minute on each side. Serve with the dipping sauce.
For the dipping sauce:
- Mix all the ingredients together until the sugar has dissolved.
