Freezer Friendly Healthy Baked Apple Oatmeal Cups
These apple oatmeal breakfast cups are super easy to make and you can change up the toppings. Plus they're freezer friendly!

Ingredients
- 4 cups oats gluten free certified if necessary
- 1 cup apple diced
- 3.5 tsp cinnamon
- 1 tsp baking powder
- ½ tsp salt
- 2.5 cups almond milk
- 1/3 cup brown sugar
- 3.5 tsp vanilla extract
- 1/2 cup honey
- 1 cup sunflower seeds
Optional Toppings
- Greek yogurt
- almond butter
- apple pieces
- sunflower seeds
Instructions
- Heat the oven to 375.
- Add all ingredients to a large bowl and mix well until everything is combined then scoop the oatmeal mixture into your muffin tin using a large ice cream scoop. (Spray non-stick spray onto the muffin tin first if you have a non-stick muffin tin)
- Bake the oatmeal cups for 20 minutes, or until cooked through. Let it cool before removing it from the muffin tin or it might not keep its shape.
- Optional: top them off with the toppings of your choice such as yogurt, almond butter, more apple pieces and sunflower seeds.

Notes
- Freeze them & thaw them out as needed. You can also re-bake them at 350 for 10 minutes.
