Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 2 tablespoons unsalted butter melted

Instructions

  1. In a large mixing bowl, whisk together the flour, eggs, and salt.
  2. Gradually pour in the milk, whisking constantly, until the batter is smooth and free of lumps.
  3. Stir in the melted butter until well combined. Let mixture sit for at least 15 minutes.
  4. Heat a nonstick skillet over medium heat, and lightly coat with butter or oil.
  5. Pour a small amount of batter into the center of the skillet, tilting and swirling the pan to spread the batter thinly and evenly.
  6. Cook for 1 to 2 minutes, or until the edges begin to curl and the bottom is lightly golden. Flip and cook the other side for an additional minute.
  7. Remove from the skillet and repeat with the remaining batter. Serve warm with your choice of sweet or savory fillings.
