French Onion Soup Recipe

French onion soup is a rich flavorful soup made with caramelized onions and beef broth, topped with bread and lots of melted gruyere cheese.

Ingredients

  • 4 Tbsp unsalted butter
  • 2 Tbsp olive oil
  • 3 lbs yellow onions -sliced
  • 1/2 tsp granulated sugar
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp ground black pepper
  • 1 cup dry white wine (ex: chardonnay, pinot grigio, etc.)
  • 8 cups beef broth
  • 1 Tbsp Worcestershire sauce 
  • 8 prigs fresh thyme
  • 2 bay leaves
  • 12 (1 inch thick) slices of French baguette bread
  • 2 cups grated gruyere cheese

Instructions

  1. Add the butter and olive oil to a large soup pot and place over medium heat. Once the butter has melted, add the onions. Stir to coat the onions in the butter.
  2. Add the sugar, salt, garlic powder, and pepper. Cook, stirring occasionally, until the onions are caramelized. This will take 45-55 minutes to get a deep brown color.
  3. Add the wine to the pot. Increase the heat to high. Cook, stirring often, for 5 minutes, until most of the wine has evaporated.
  4. Add the beef broth, Worcestershire sauce, thyme, and bay leaves. Bring the liquid to a boil. Then, reduce the heat to simmer. Cook for 20 minutes. Remove the bay leaves and thyme sprigs.
  5. Ladle the soup into oven-safe bowls, filling 3/4 full. Place the bowls on a baking sheet. Top each bowl with 2 slices of bread.* Top the bread with 1/3 cup of cheese.
  6. Place the soup under a broiler until the cheese is melted and bubbling.

Notes

  • *You can also cut the bread slices into small bite-size pieces before adding it to the soup.
