Fresh Corn Salad

The Fresh Corn Salad combines grilled corn kernels with crisp cucumbers, sweet cherry tomatoes, and finely diced red onion, all tossed in a zesty dressing of olive oil and apple cider vinegar. Ingredients

Corn Salad
  • 4 corn shucked and silks removed, ears
  • ¼ cup olive oil
  • 1 cup tomatoes quartered, cherry or grape
  • 1 English cucumber sliced and quartered
  • ½ red onion diced, medium
  • ¼ cup fresh herbs choose tender herbs like parsley, dill, cilantro, basil, mint, and tarragon, chopped
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper freshly ground
  • feta cheese optional, crumbled

Instructions

  1. Preheat an outdoor grill or indoor grill pan on the stove to medium-high heat. Lightly brush the corn with 2 tablespoons of olive oil and grill for 8 to 10 minutes, rotating a few times for even charring. Then remove to a plate.
  2. Once the corn is cool to the touch, use a large knife to shave off the kernels.
  3. Place the corn kernels, tomatoes, cucumber, red onion, and herbs in a bowl. Drizzle with 2 tablespoons of olive oil, apple cider vinegar, salt, and pepper, then stir together.
  4. If you'd like, garnish with crumbled feta before serving.
