Ingredients

  • 4 ears corn or 3 cups frozen corn, on the cob
  • 2 avocado pitted and diced
  • 1 red onion finely diced, small
  • 1 cup tomatoes cut in half, cherry or grape
  • 1 red bell pepper finely diced
  • 1/2 cilantro bunch
  • cayenne pepper dash
  • salt to taste
  • black pepper to taste

Instructions

For Frozen Corn
  1. Prepare frozen corn according to package directions.
For the Salsa
  1. After corn is prepared, cool it to room temperature. Using a sharp knife, cut corn kernels from cob and place them in a medium-sized bowl.
  2. Add remaining ingredients and toss to combine.
  3. Serve at room temperature.

Notes

  • For a heartier salsa, add rinsed and drained black beans, black-eyed peas, or pinto beans.
