Fresh Corn Salsa
Description
The Fresh Corn Salsa recipe features fresh or cooked corn kernels combined with ripe avocado, finely diced red onion, halved cherry or grape tomatoes, red bell pepper, and chopped cilantro. These ingredients come together in a medium bowl with a dash of cayenne pepper, salt, and black pepper to enhance and unify the flavors.
The resulting salsa delivers a fresh combination of sweet, creamy, crisp, and aromatic elements. The corn provides a pleasant sweetness and crunch, which contrasts with the soft creaminess of avocado. The onion and pepper add subtle sharpness and texture, while cilantro brightens the mix.
This salsa is best served at room temperature to allow flavors to meld. It pairs well with tortilla chips or can garnish Mexican dishes, adding color and texture. For variation or to extend volume, rinsed and drained black beans, black-eyed peas, or pinto beans can be incorporated.
Because avocado tends to brown, serving the salsa fresh is recommended. Leftovers may be refrigerated for a day, with fresh avocado added if desired before serving again.
