Ingredients

  • 1 tablespoon salted butter
  • 2 cups fresh corn kernels 4 ears of corn
  • ½ cup diced red bell pepper
  • ¼ cup green onions diced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme

Instructions

  1. In a large skillet, melted butter on medium-high heat.
  2. Add the fresh corn to the pan and cook for 3 minutes. Add the red bell pepper and green onions to the pan. Cook for an additional 3 minutes. Season with salt, pepper, and fresh thyme and cook on medium-low heat for an additional 4 minutes.

Notes

  • I highly recommend using fresh sweet corn cut off the cob, but in a pinch you can use frozen or canned.
