Fresh Mint Sauce

Ingredients

  • ½ cup fresh parsley packed
  • ½ cup fresh mint leaves packed
  • ⅔ cup vegetable oil
  • 1 clove garlic minced
  • 1 tablespoon white wine vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Place all ingredients in a food processor and pulse 2-3 times or just until chopped. The sauce should not be smooth.
  2. Chill at least 1 hour before serving.
  3. Serve over grilled meats (especially lamb) or with lamb meatballs.

Notes

  • It is important to refrigerate the sauce at least one hour, the flavor will change dramatically as it sits. 
  • Do not use olive oil in this recipe, the flavor is not the same.
  • The oil will naturally separate, this is expected. Shake before using.
  • This sauce will keep in the refrigerator for 2-3 days. Do not store longer.
  • Mint sauce can be mixed with fresh yogurt as a dip or served over meat.
