Fresh Mint Sauce

If you like chimichurri, you'll love this minty refreshing sauce to perk up any dish.

Ingredients
- ½ cup fresh parsley packed
- ½ cup fresh mint leaves packed
- ⅔ cup vegetable oil
- 1 clove garlic minced
- 1 tablespoon white wine vinegar
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Place all ingredients in a food processor and pulse 2-3 times or just until chopped. The sauce should not be smooth.
- Chill at least 1 hour before serving.
- Serve over grilled meats (especially lamb) or with lamb meatballs.
Notes
- It is important to refrigerate the sauce at least one hour, the flavor will change dramatically as it sits.
- Do not use olive oil in this recipe, the flavor is not the same.
- The oil will naturally separate, this is expected. Shake before using.
- This sauce will keep in the refrigerator for 2-3 days. Do not store longer.
- Mint sauce can be mixed with fresh yogurt as a dip or served over meat.
