Fresh Peach Cake

Ingredients

Cake
  • 1/4 cup butter at room temperature
  • 1/4 cup plain Greek yogurt or sour cream at room temperature
  • 3/4 cup granulated sugar
  • 2 eggs whites from large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • 1/8 teaspoon salt
  • 1/3 cup milk
Topping
  • 1 ½ cup thinly sliced peaches
  • 1/4 cup Chopped Pecans
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350 F. Grease a deep 8-inch round (8x3) cake pan. Set aside.
  2. With a hand or stand mixer, beat together butter, yogurt, and granulated sugar until well-combined.
  3. Mix in egg whites, vanilla extract, and almond extract until well-combined.
  4. Add flour, baking powder, and salt. Begin mixing on low speed, and mix just until combined. Don't overmix.
  5. Stream in milk, and continue mixing just until batter is combined.
  6. Pour batter into prepared pan.
  7. Arrange peach slices over batter.
  8. Sprinkle pecans over peaches.
  9. Combine remaining 2 tablespoons sugar and cinnamon. Sprinkle over peaches and top of cake.
  10. Bake for 25-35 minutes, or until a toothpick inserted into the center comes out clean.
  11. Serve warm.

Notes

  • Yogurt: Can use 2% or whole milk Greek yogurt.
  • Almond extract: Or an additional 1/2 teaspoon vanilla extract.
  • Milk: Can use anything from skim to whole milk.
  • Peaches: There's no need to peel the peach.
