Fresh Pineapple Mango Salsa

Ingredients

  • 2 cups pineapple this equals 1 pineapple, fresh, diced
  • 1 cup Mango any variety, diced
  • 3/4 cup sweet onion chopped
  • 1 tablespoon jalapeno pepper remove seeds, minced
  • 1/4 cup cilantro minced leaves
  • 1 tablespoon olive oil
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin ground
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic minced

Instructions

  1. In a large bowl, combine pineapple, mango, onion, and jalapeno.
  2. In a smaller bowl, add cilantro, olive oil, ground coriander, cumin, salt, and minced garlic, stir well.
  3. Add herb and oil contents of the smaller bowl to the large bowl. Cover and refrigerate for at least 15 minutes to allow flavors to set.

Notes

  • Serve with tortilla chips, on seafood, in tacos, or on grilled meat. 
  • This stays fresh in an air tight container in the refrigerator for up 4 days.
