Fresh Strawberry Cobbler (Quick & Easy)

Ingredients

Strawberry Cobbler Filling
  • 4 cups fresh strawberries
  • 1/2 cup granulated sugar
  • 3 tbsp corn starch
  • 1/4 cup brown sugar
  • 1 tbsp lemon juice
Cobbler Topping
  • 1 1/2 cups all purpose flour cold
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter very cold
  • 1 tbsp vanilla extract
  • 1 cup buttermilk cold
  • 3 tbsp granulated sugar for the topping

Instructions

Cobbler Filling

  1. Clean and slice strawberries into bite sized pieces. Place them in a bowl with the remaining filling ingredients. Stir to combine, set aside.
Cobbler Topping
  1. In a medium size bowl mix all of the dry ingredients.
  2. Grate or cut butter into the dry ingredients. Combine until the mixture is crumbly.
  3. In a separate dish, combine buttermilk with the vanilla extract. Pour the buttermilk mixture into the dry ingredients. Stir to combine everything together.
  4. Place strawberry filling on the bottom of a 9 inch pan.
  5. Place 6-8 spoonfuls of dough on top. Sprinkle with sugar.
  6. Bake at 375°F for 35-40 minutes or until the top is golden brown. Serve immediately with your favorite ice cream.
