Fresh Tomato Summer Pasta Sauce
This Fresh Tomato Summer Pasta Sauce combines chopped ripe tomatoes, fresh basil, garlic, toasted pine nuts, Parmesan cheese, olive oil, and balsamic vinegar. The ingredients meld without cooking to create a bright, fresh, herbaceous sauce ideal for tossing with pasta or spooning over bruschetta.
Ingredients
- 3 large tomato or cherry and pear tomatoes, fresh
- 1/2 cup Parmesan Cheese Freshly grated, or pecorino romano cheese
- 2-3 cloves garlic minced
- 1/3 cup basil cut chiffonade, fresh
- 1/4 cup pine nuts toasted
- 1/4 cup olive oil
- 2 Tablespoons balsamic vinegar
- salt kosher salt, to taste
- black pepper kosher salt, to taste
- 1/2 pound pasta
Instructions
- Chop tomatoes. Add basil, cheese, garlic, pine nuts, olive oil and balsamic vinegar.
- Stir. Add salt and pepper to taste. Let sit while pasta is cooking, about 20 minutes.
- Toss with pasta or on top bruschetta.
