Ingredients
- 8 cups diced watermelon, about 1 medium watermelon
- 2 large mangoes, peeled, pitted, and diced
- 1 ¼ cups diced strawberries
- 1 ½ cups crumbled Feta cheese
- ½ cup mint leaves, chopped
Dressing
- ⅓ cup olive oil
- 3 tablespoons freshly squeezed lemon juice, about 1 ½ lemons
- 2 teaspoons salt
- ½ teaspoon pepper
Instructions
- In a large bowl, add the watermelon, mango, and strawberries. Stir gently.
- Make the dressing by whisking together the olive oil, lemon juice, salt, and pepper in a small bowl. Pour over the fruit and stir until combined.
- Garnish with the mint leaves and feta cheese. Serve immediately.
