Fresh Watermelon and Feta Salad

This salad is fresh, healthy, and refreshing. The watermelon mixed with the other fruits pack in some great nutrients and the light dressing will leave you wanting an extra serving!

Ingredients

  • 8 cups diced watermelon, about 1 medium watermelon
  • 2 large mangoes, peeled, pitted, and diced
  • 1 ¼ cups diced strawberries
  • 1 ½ cups crumbled Feta cheese
  • ½ cup mint leaves, chopped
Dressing
  • ⅓ cup olive oil
  • 3 tablespoons freshly squeezed lemon juice, about 1 ½ lemons
  • 2 teaspoons salt
  • ½ teaspoon pepper

Instructions

  1. In a large bowl, add the watermelon, mango, and strawberries. Stir gently.
  2. Make the dressing by whisking together the olive oil, lemon juice, salt, and pepper in a small bowl. Pour over the fruit and stir until combined.
  3. Garnish with the mint leaves and feta cheese. Serve immediately.
