  • 1 cup brown sugar
  • ½ teaspoon sea salt
  • ¼ cup canola oil
  • 6 pieces saba bananas, peeled and cut lengthwise into halves

    Cup of Yum
  1. In a sauce pot over medium heat, combine coconut milk, brown sugar, and salt and whisk together until sugar and salt are dissolved.
  2. Continue to cook for about 20 to 25 minutes or until the mixture is reduced and thickened.
  3. In a skillet over medium heat, heat oil. Add bananas in a single layer and fry, turning once or twice, until golden and crisp on both sides.
  4. Remove from pan and drain on paper towels.
  5. Drizzle coconut caramel sauce over fried bananas.

Notes

  • For a smooth, silky texture, simmer the coconut milk at medium heat and do not bring it to a boil lest it curdles and separates.
