Ingredients

  • 1 large sweet potato
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • salt to taste

Instructions

  1. Peel the sweet potato and cut it into small, 1/4-inch thick pieces.
  2. Heat olive oil in a large non-stick skillet over medium heat.
  3. Place the sweet potato slices in the skillet in a single layer. Cook for about 5 minutes on each side or until they are golden brown and tender.
  4. Season with smoked paprika and salt, then toss to evenly coat the sweet potatoes. Cook for an additional minute.
  5. Remove from heat and serve immediately as a delightful side dish.
