Ingredients

  • 1 cup dried bean rinsed
  • ½ yellow onion roughly sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon red chile pepper flakes
  • 1 teaspoon oregano dried Mexican
  • 4 cups hot water
  • salt to taste

Instructions

  1. Put everything but the salt in a large pot, cover, and bring to a boil. Reduce to a simmer, and let cook for around 2 hours, or until the beans are soft. (If you're using black beans, this may take longer than with other varieties.)
  2. Stir in the salt and let cook for another ½ hour.
  3. Serve the beans and their broth in individual bowls. Or strain out the beans, serve those, and use the broth as a soup base.

Notes

  • Mash some beans or blend portion for a thicker, stew-like consistency if desired.
  • Adjust salt and spices according to taste preferences.
  • For deeper flavor, lightly brown onions or aromatics before adding water and beans.
  • Use fresh dried beans to ensure they soften fully during cooking.
