Frijoles de la Olla is a simple, hearty bean dish made by slowly simmering dried beans with onion and spices until tender. The cooking liquid and beans together create a subtly spiced broth with earthy flavors from cumin, oregano, and chile flakes. The beans remain whole but soft, making a comforting dish often served with the cooking broth as a soup or used as a side.

Description

Frijoles de la Olla combines dried beans cooked without soaking, yellow onion, ground cumin, red chile flakes, dried oregano, and salt in hot water. The mixture is brought to a boil, then simmered gently for about two hours until beans soften thoroughly.

The slowly infused spices and onion add subtle heat and earthiness without overpowering the beans’ natural flavor. Salt is added near the end to prevent toughening the beans during cooking.

The dish can be served with its broth in bowls or drained to serve just the beans. The broth makes a flavorful base for soups or stews.

Adjusting the broth by mashing part of the beans yields a thicker texture. Pre-sautéing onion and additional aromatics can enhance flavor but is not necessary. Fresh beans are recommended for better tenderness.

  • 1 cup dried bean rinsed
  • ½ yellow onion roughly sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon red chile pepper flakes
  • 1 teaspoon oregano dried Mexican
  • 4 cups hot water
  • salt to taste

Instructions

  1. Put everything but the salt in a large pot, cover, and bring to a boil. Reduce to a simmer, and let cook for around 2 hours, or until the beans are soft. (If you're using black beans, this may take longer than with other varieties.)
  2. Stir in the salt and let cook for another ½ hour.
  3. Serve the beans and their broth in individual bowls. Or strain out the beans, serve those, and use the broth as a soup base.

Notes

  • Mash some beans or blend portion for a thicker, stew-like consistency if desired.
  • Adjust salt and spices according to taste preferences.
  • For deeper flavor, lightly brown onions or aromatics before adding water and beans.
  • Use fresh dried beans to ensure they soften fully during cooking.
