Ingredients
Sugar Cookies:
- ¾ cup softened unsalted butter
- 1 cup granulated sugar
- 1 large room-temperature egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
Frosting:
- 1 (15-ounce) can vanilla frosting
- ½ teaspoons peppermint extract, optional
Topping:
- 7 Crushed candy canes
Instructions
- Preheat oven to 350 degrees Fahrenheit, and line a 9x13 inch baking dish with aluminum foil and lightly spray with non-sticking cooking spray. Set aside.
- Using an electric mixer, whisk together the ¾ cup softened unsalted butter and 1 cup granulated sugar until creamy and fluffy.
- Add in the 1 large room-temperature egg and whisk until creamy and fluffy. Add in the 1 teaspoon vanilla extract.
- Gently mix in the 2 cups all-purpose flour, ½ teaspoon baking powder, and ½ teaspoon salt until combined.
- Place the sugar cookie dough onto the baking sheet or dish and press down until the dough is spread out and even.
- Bake for 15-18 minutes or until the top is no longer wet. Allow the sugar cookie to cool.
- Mix the 1 (15-ounce) can vanilla frosting and ½ teaspoons peppermint extract,. Frost the sugar cookie and then top it with 7 crushed candy canes.
- Cut into squares then cut into triangles and serve.
