Frozen Berry Compote

This simple frozen berry compote recipe requires just a few ingredients! Compote is perfect on pancakes, waffles, ice cream, or even stirred into your morning yogurt.

Ingredients

  • 2 cups mixed berries frozen (200g)
  • 2 tablespoons sugar
  • 2 tablespoons water
  • ½ teaspoon vanilla extract

Instructions

  1. Add all ingredients to a saucepan over a medium/low heat and stir well. Allow it to boil for about 5 minutes, stirring often to stop it from scorching.
  2. Reduce the heat to low and let it simmer and bubble for 10 minutes. It will thicken further as it cools.
  3. Serve warm or allow to cool and store in a sterilised jar in the fridge for up to 5 days (or freeze for up to 2 months).
