Ingredients

  • 12 ounces frozen carrots
  • 2 tablespoons butter
  • 1 teaspoon garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup water

Instructions

    Cup of Yum
  1. Combine all of the ingredients in a medium skillet.
  2. Bring to a simmer.
  3. Simmer uncomverd for 5-8 minutes, or until all the water is almost evaporated.

Notes

  • Leftover cooking liquid makes a delicious flavor boost when added to soups, rice, or used to sauté other vegetables.
  • Use a large enough skillet so the carrots can spread out in a single layer. Overcrowding leads to steaming instead of caramelizing, which affects both texture and flavor.
  • Start with high heat to quickly defrost and get good caramelization, then reduce to medium heat to finish cooking.
  • Makes an ideal emergency side dish when unexpected dinner guests arrive - most people always have the basic ingredients in their kitchen.
