Frozen Cottage Cheese Bark
Frozen Cottage Cheese Bark is a chilled snack consisting of a smooth blend of cottage cheese, honey, and peanut butter spread thinly and frozen into a firm sheet. Swirled melted chocolate chips and granola topping add texture and a mix of flavors. This bark breaks into pieces for a creamy yet crunchy, chilled bite.
Ingredients
- 2 cups (16 oz) cottage cheese I used Good Culture whole milk
- 2 Tablespoons honey
- 2 Tablespoons peanut butter
- 3 Tablespoons chocolate chips I used Lily's chocolate chips
- 3 Tablespoons granola of choice
Instructions
- In a blender or food processor, blend together cottage cheese, honey and peanut butter until smooth.
- Pour mixture onto a rimmed baking sheet line with parchment paper and spread evenly using a spatula or spoon into a rectangular shape. You want the bark to be about a ¼ of an inch thick.
- Melt chocolate chips and add teaspoon size dollops onto the cottage cheese layer. Use a knife to swirl the chocolate around.
- Sprinkle the granola on top and place the bark in the freezer for about 3 hours or until the cottage cheese is firm.
- Once firm, cut or break into 16-20 pieces and enjoy.
- Store leftover bark in a sealed freezer bag or airtight container for up to 3 months.
