  • 2 cups (16 oz) cottage cheese I used Good Culture whole milk
  • 2 Tablespoons honey
  • 2 Tablespoons peanut butter
  • 3 Tablespoons chocolate chips I used Lily's chocolate chips
  • 3 Tablespoons granola of choice

Instructions

  1. In a blender or food processor, blend together cottage cheese, honey and peanut butter until smooth.
  2. Pour mixture onto a rimmed baking sheet line with parchment paper and spread evenly using a spatula or spoon into a rectangular shape. You want the bark to be about a ¼ of an inch thick.
  3. Melt chocolate chips and add teaspoon size dollops onto the cottage cheese layer. Use a knife to swirl the chocolate around.
  4. Sprinkle the granola on top and place the bark in the freezer for about 3 hours or until the cottage cheese is firm.
  5. Once firm, cut or break into 16-20 pieces and enjoy.
  6. Store leftover bark in a sealed freezer bag or airtight container for up to 3 months.
