Frozen Paleo Chocolate Covered Bananas

Ingredients
- 3 bananas
- ⅓ cup almond butter
- ½ teaspoon vanilla
- 1 tbs coconut oil
- ¾ cups chocolate chips mini
Instructions
- Slice your bananas and place half of them on a tray lined with parchment paper.
- In a small bowl, whisk together the vanilla and almond butter.
- Portion out the almond butter mixture onto the bananas and top each one with another banana to make a “sandwich”.
- Place in the freezer for a moment.
- In a small pot, heat the coconut oil and chocolate chips at low temperatures. Once mostly melted, remove from heat and stir to combine.
- Carefully, dip the banana sandwiches one at a time into the melted chocolate and place them back on the parchment paper.
- Freeze for thirty minutes or until you’re ready to enjoy it!
- Makes 23 banana bites (roughly)

Notes
- Any nut or seed butter will work for the frozen chocolate-covered bananas. If you want to make them nut-free, use Sun Butter. However, you want fresh nut butter so that it smears easily.
- To keep the chocolate-coated bananas paleo, you need to use enjoy-life chocolate chips as they're dairy-free, gluten-free, soy-free, and vegan.
- You want ripe bananas for sweetness but not too ripe that they're mushy.
- It can be hard to spread the almond butter filling on the bananas if they're super ripe. If this is the case, freeze the sliced bananas first (freeze them peeled but whole). Then, slice them from frozen and spread the nut butter.
- Once you make the bananas store them in the freezer. However, wait until they are frozen completely before putting them in a bag or container so you don’t get chocolate everywhere.
