Ingredients

  • 2 ½ cups plain greek yogurt
  • ⅔ cup strawberries sliced
  • ⅓ cup blueberries
  • ¼ cup sugar-free honey
  • 2 tablespoons cashews halved
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Add the Greek yogurt, sugar-free honey and vanilla extract into a mixing bowl.
  2. Whisk until well combined.
  3. Using an offset spatula, spread onto a baking sheet lined with parchment paper or a Silpat.
  4. Add the sliced strawberries over the top, slightly pressing into the yogurt. Add in the blueberries. Lastly, add in the cashews and freeze for at least 4 hours or overnight.
  5. Once fully frozen and set, break apart using a sharp knife and it’s ready to enjoy.
