Ingredients
- 2 ½ cups plain greek yogurt
- ⅔ cup strawberries sliced
- ⅓ cup blueberries
- ¼ cup sugar-free honey
- 2 tablespoons cashews halved
- 1 ½ teaspoons vanilla extract
Instructions
- Add the Greek yogurt, sugar-free honey and vanilla extract into a mixing bowl.
- Whisk until well combined.
- Using an offset spatula, spread onto a baking sheet lined with parchment paper or a Silpat.
- Add the sliced strawberries over the top, slightly pressing into the yogurt. Add in the blueberries. Lastly, add in the cashews and freeze for at least 4 hours or overnight.
- Once fully frozen and set, break apart using a sharp knife and it’s ready to enjoy.
