Fruit Pizza

Ingredients

  • 2 cups old fashioned rolled oats
  • 1 cup all-purpose flour
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • ⅔ cup honey
  • 3 tablespoons coconut oil room temperature
Filling
  • 1 ¼ cups vanilla Greek Yogurt full fat or a thicker yogurt works best
  • 2 tablespoons honey
Fruit Topping
  • ½ cup blackberries
  • ½ cup raspberries
  • ⅓ cup mandarin orange slices
  • 1 peeled and sliced medium kiwi
  • 2 sliced strawberries
  • ⅓ cup blueberries

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Grease a 10 inch spring form cake pan and set aside.
  2. In a large bowl combine 2 cups old fashioned rolled oats, 1 cup all-purpose flour, ½ teaspoon ground cinnamon, 1 teaspoon vanilla extract, and ⅛ teaspoon salt together. Add ⅔ cup honey, 3 tablespoons coconut oil, and mix until a dough forms.
  3. Spread the mixture into prepared pan and press down firmly with a spatula or the bottom of a glass cup. Bake in preheated oven for 10 minutes. Remove from oven and allow to cool completely.
  4. Combine 1 ¼ cups Vanilla Greek yogurt with 2 tablespoons honey. With an offset spatula, spread yogurt evenly on top of of cooled crust.
  5. Decorate with ½ cup blackberries, ½ cup raspberries, ⅓ cup mandarin orange slices, 1 peeled and sliced medium kiwi, 2 sliced strawberries and ⅓ cup blueberries. Enjoy immediately or place in the fridge for up to an hour to cool and set.
