Fruit Salad
This Fruit Salad mixes fresh raspberries, strawberries, blueberries, grapes, and pineapple with optional mint and a light splash of orange zest and juice. The combination provides a vibrant, juicy mix showcasing a range of sweet and slightly tart flavors with varied textures. It's best served immediately to maintain freshness and avoid excess liquid from the citrus.
Ingredients
- 1 pint raspberries washed, fresh
- 1 pint strawberry washed, hulled and quartered, fresh
- 1 pint blueberries washed, fresh
- 2 cups grapes (red or green), halved
- 2 cups pineapple cut into small chunks, fresh
- mint leaf optional, fresh
- 1 orange (for juice and zest--I don't use the whole thing, just to taste)
Instructions
- Combine all of the fruit in a large bowl--I add the raspberries at the very end so they don't get smashed.
- Add some chopped fresh mint leaves, to taste, if desired.
- Zest some of the orange over the bowl and squeeze a little fresh orange juice over the top (don't add to much because you don't want a lot of extra liquid). Serve immediately.
Notes
- The salad can be prepared a few hours ahead and kept refrigerated; add the orange juice right before serving to avoid excess moisture.
- Swap fruits seasonally or as preferred; if adding apples, pears, or bananas, toss them in lemon juice to prevent browning before mixing into the salad.
- Do not freeze this salad as thawed fruit changes texture, but frozen fruit can be used in smoothies instead.
