Description

The Fruit Salad includes an assortment of freshly washed berries, halved grapes, and diced pineapple for a colorful, refreshing combination. Mint leaves add a subtle herbal note when used. The salad is finished with some freshly grated orange zest and a small amount of orange juice, both adding brightness without turning the fruit watery. The method emphasizes adding raspberries last to keep them intact.

This salad is a versatile make-ahead option; most fruits hold up well if prepared a few hours in advance and stored chilled, but the citrus juice should be added just before serving to avoid soggy fruit. Swapping or adding seasonal fruits is encouraged, with care taken to treat items like apples, pears, or bananas with lemon juice to prevent browning.

Freezing fruit for this salad is not advised as it changes texture upon thawing; however, frozen fruit can be repurposed in smoothies.

Ingredients

Servings
  • 1 pint raspberries washed, fresh
  • 1 pint strawberry washed, hulled and quartered, fresh
  • 1 pint blueberries washed, fresh
  • 2 cups grapes (red or green), halved
  • 2 cups pineapple cut into small chunks, fresh
  • mint leaf optional, fresh
  • 1 orange (for juice and zest--I don't use the whole thing, just to taste)

Instructions

  1. Combine all of the fruit in a large bowl--I add the raspberries at the very end so they don't get smashed.
  2. Add some chopped fresh mint leaves, to taste, if desired. 
  3. Zest some of the orange over the bowl and squeeze a little fresh orange juice over the top (don't add to much because you don't want a lot of extra liquid). Serve immediately. 

Notes

  • The salad can be prepared a few hours ahead and kept refrigerated; add the orange juice right before serving to avoid excess moisture.
  • Swap fruits seasonally or as preferred; if adding apples, pears, or bananas, toss them in lemon juice to prevent browning before mixing into the salad.
  • Do not freeze this salad as thawed fruit changes texture, but frozen fruit can be used in smoothies instead.
