Fruit Sandwich フルーツサンドイッチ

Unique Japanese fruit sandwich recipe and instructions to make not just delicious mascarpone and whipped cream filled fruit sandwich but also photogenic.

Ingredients

  • 100 g whipping cream (1/2 cup)
  • 100 g mascarpone (1/2 cup)
  • 15 g sugar 1 tbsp
  • 2 tbsp jam *1 any type
  • 4 lices Shokupan Japanese bread *2
  • 4 small strawberries *3
  • 1/2 kiwi fruit
  • 1 small banana

Instructions

  1. Place whipping cream, mascarpone and sugar in a large mixing bowl. 
  2. Whip them all together by hand till it makes a soft peak. 
  3. Refrigerate whipped cream and mascarpone till it is needed 
  4. Wash strawberries and cut the stem off and wipe off water. 
  5. Peel and cut kiwi fruit.
  6. Peel and cut banana about 2cm (0.8inch) thick.
  7. Spread the jam on one side of 4 slices of bread.
  8. Place the bread on a cling wrap and spread the whipped cream about 1cm (0.4inch) thick.
  9. Layout the fruit according to how you want to cut the bread, and how the fruit will look when it is cut. 
  10. Drop more whipped cream over the fruit and place another slice of bread to sandwich.
  11. Wrap with the cling wrap and draw the location of where each fruit piece is with a permanent marker over the cling wrap. 
  12. Refrigerate at least 2 hours to settle. 
  13. After refrigerated for 2 hours, take them out and slice it with a sharp knife.  

Notes

  • *1 I used apricot jam
  • *2 Shokupan Japanese bread can be substituted with white bread, about 1.5cm thick (0.6inch)
  • *3 These fruits can be substituted with any fruit which does not contain much water. This is an update and as the photo indicates, I used different fruits.
