Ingredients
- 1 cup unsalted butter , softened
- 3/4 cup brown sugar , packed
- 1 large egg , room temperature
- 1 teaspoon vanilla extract
- 1 2/3 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 ounces candied red cherries , chopped
- 4 ounces candied green cherries , chopped
- 4 ounces candied pineapple , chopped
- 3/4 cup golden raisins
- 1 cup pecans , chopped
Instructions
- Preheat oven to 325 degrees and line baking sheets with parchment paper.
- To your stand mixer add the butter and brown sugar on medium high speed until light and fluffy, about 2 minutes.
- Add in the egg and vanilla extract.
- Sift together flour, baking soda and salt.
- On the lowest speed setting add in the flour mixture until just combined.
- Add in the candied fruits, raisins and pecans.
- Scoop 1 tablespoon sized scoops of dough 2 inches apart on your baking sheets.
- Bake for 13-15 minutes, until just barely browning on the bottom.
