Fudgy Mini Brownie Bites
These homemade brownie bites are a chocolate lover’s dream! Rich and fudgy, they melt in your mouth. Made in under 30 minutes, they are great for any occasion, as well as lunch boxes!

Ingredients
- ½ cup butter melted, 1 stick
- 1 cup granulated white sugar
- 2 large eggs
- ⅔ cup cocoa powder spooned and leveled
- ½ cup all-purpose flour spooned and leveled
- 1 cup mini chocolate chips divided
Instructions
Get prepped
- Preheat the oven to 350°F and spray a mini muffin tin well with baking spray or use mini muffin liners.

Make the brownie batter
- Whisk together the melted butter and sugar in a large mixing bowl until combined.
- Whisk in the eggs until smooth and creamy.
- Sift in the cocoa powder and flour and mix until combined.
- Fold in ¾ cup of mini chocolate chips.
Scoop and bake
- Use a small cookie scoop to add one scoop of dough into each well in the prepared muffin tin.
- Sprinkle the remaining mini chocolate chips on top and bake for 14-16 minutes or until a toothpick comes out chocolatey but not doughy.
- Allow the brownie bites to cool completely and then gently remove by holding the sides and gently spinning the bites back and forth until they come loose.
Notes
- To prevent your bites from sticking, line the pan with mini-muffin liners or use a non-stick pan sprayed well with baking spray (which contains flour) instead of just oil. Alternatively, manually grease each well with butter or shortening, and add a sprinkle of flour or cocoa powder. Allow the bites to cool completely before removing them to prevent breaking. Twist them back and forth to loosen, and use a butter knife along the edges if needed, though this might slightly misshape them.
